The Story
Set in the charming village of Assagao, Kesar Bagh, established in 2026, by Azaan Qureshi opens as a destination dining experience centred around the refined craft of Dum cuisine — a slow-cooking tradition rooted in the royal kitchens of Awadh. Housed within a restored Portuguese residence, the restaurant brings together culinary heritage, design, and immersive hospitality in one cohesive setting. The concept draws inspiration from the historic Kaiserbagh complex of Lucknow, the grand palace of Nawab Wajid Ali Shah. More than a royal residence, Kaiserbagh once served as a vibrant cultural durbar where poetry, music, art, and gastronomy flourished together. This spirit of refinement, indulgence, and artistic expression now finds a contemporary interpretation in Goa through Kesar Bagh.

Azaan Qureshi
At the centre of the culinary programme is Chef Azaan Qureshi, representing the third generation of the celebrated Qureshi Khandan, widely recognised for preserving and elevating the tradition of Dum cooking in Indian gastronomy. He is the grandson of Padma Shri awardee Chef Imtiaz Qureshi, the visionary behind the iconic Dum Pukht cuisine at ITC Maurya, and the son of Gulam Moinuddin Qureshi, who has safeguarded and refined the family’s culinary traditions for decades. Having grown up surrounded by the discipline and patience that define classical Dum cooking, Chef Azaan carries this legacy forward while presenting his own interpretation of heritage cuisine for contemporary diners.
